From childhood onwards, all aspiring cooks like to play with fire. Think of red hot barbecue coals or the flames licking up from the flambé pan. This class explores the harnessing of fire to the cook’s best advantage. More often than not, a little heat is all it takes.
The class explores a variety of cooking methods and utensils with a view to enlarging the range of cooking techniques at the participant’s disposal. The class touches upon classic methods of roasting, grilling, poaching, braising and sautéing to explore how different temperatures and different methods deliver distinctly different textures and flavours.
